It is a sweet wine that highlights the pliability of the native Piedmontese grape variety and its predisposition to drying. Despite the concentration of sugars, the wine retains fragrance and freshness, making it a pleasantly smooth drink. It is perfectly paired with small dry pastries or a board of savoury, aged cheeses.
"Talin" Erbaluce di Caluso Passito di Ilaria Salvetti is made from grapes that come from several plots located on a splendid hill of morainic origin, situated within the municipal territory of Caluso, at an altitude of 350 meters above sea level. The soils are characterized by the presence of pebbles, gravels and sands, a memory of the debris left by the retreat of a large alpine glacier, which shaped the entire Canavese area. The vineyards are conducted according to organic farming principles, without using chemicals. The grapes are hand-picked in early September, and the best bunches are spread out on bamboo cane mats placed in a well-ventilated loft. After three months of drying, the grapes are destemmed and gently crushed. The must ferments spontaneously in temperature-controlled stainless steel tanks with indigenous yeasts. The wine matures for 60 months in oak barrels and is aged for several months in bottles.
