The Dogliani 'Otto Filari' from Eraldo Revelli's Piedmontese winery, is a label made only with grapes from the estate's youngest vineyards, which give a wine with a lively, fresh profile and a juicy, fruity flavour. In order to preserve the aromatic delicacy of the grapes, the entire vinification and ageing process takes place only in steel, without any use of wood. It is a version that highlights the simpler and more immediate face of this ancient native red grape variety, which has always been cultivated in these lands and still represents the most loved everyday wine.
The Dogliani 'Otto Filari' wine is produced by the Eraldo Revelli winery, which has been involved in winegrowing for several generations in the hilly area of Belvedere Langhe, near Dogliani. The grapes come from a single plot called 'Otto Filari', located in the commune of Farigliano, at an altitude of 470 metres above sea level, facing south-west. The soils are composed of clay, limestone and sand, very suitable for Dolcetto. Harvesting is carried out manually in the second half of September and the best grapes are sent for fermentation in temperature-controlled stainless steel vats, with maceration on the skins for about a week, with daily pumping over. The wine matures for 4-5 months in steel tanks before bottling.
"Eraldo Revelli's 'Otto Filari' is the youngest and most fragrant version of the range of Dogliani denomination wines offered by the winery. It is the classic wine with a convivial character, perfect to enjoy in the company of friends on informal occasions. Ideal with a charcuterie board, with tasty first courses or with roast white meats. In the glass it is ruby red in colour with youthful violet reflections. Fragrant and perfumed, it expresses floral notes of iris, violet, aromas of small red berries, cherry and red-fleshed plum. Agile and flowing, it has a very fine tannic texture and crisp aromas of ripe fruit. The finish is pleasantly fresh and with good taste persistence.
