This variety, already appreciated by the Etruscans over two thousand years ago, stands out for its intensity and roundness, and Tenuta Aquilaia, a master in interpreting ancient indigenous grape varieties in a modern key, offers us a Ciliegiolo of great harmony that embodies the soul and taste of this generous land. The "Auspici" line, to which this label belongs, is distinguished by the use of selected grapes, cultivated in respect of tradition and the environment, harvested by hand and left to refine both in wood and in bottle, testifying to the constant commitment to guarantee the maximum quality and authenticity of the product.
The Ciliegiolo from Tenuta Aquilaia reflects the magical encounter between territory, vineyard, and artisanal work. The grapes undergo fermentation at a controlled temperature of 26°C with maceration on the skins for 15 days. Immediately after alcoholic fermentation, malolactic fermentation takes place, which contributes to the complexity and roundness of the wine. Aging takes place in stainless steel tanks for a period of eight months, allowing the wine to gradually develop its structure and distinctive character. Care and attention during all stages of winemaking and aging give the Ciliegiolo a very rich aromatic personality, embodying the authentic essence of the territory and the winemaking tradition of the Maremma.
