Querciabella's Chianti Classico wine comes from a model estate, managed with full respect for the environment, according to the principles of organic and biodynamic agriculture. The vineyards are located in the municipalities of Greve, Radda and Gaiole, in some of the most qualitatively interesting areas of the Chianti Classico district, and are surrounded by large wooded areas that guarantee rich biodiversity. The grapes come from plots located at an altitude of between 350 and 550 metres above sea level, with sunny south-east, south and south-west-facing exposure. The soils are characterised by the presence of marl, sand and clay. After destemming, spontaneous fermentation with indigenous yeasts takes place in stainless steel tanks, with maceration on the skins for a dozen days. The wine is aged for a year in barriques and tonneaux, with only 5% new wood.
