After providing grapes to a local cooperative for many years, the Lallement Massonnot label was created in 1981 to market their Champagnes directly. The grapes of Chardonnay, Pinot Noir, and Meunier are vinified separately by grape variety, following the maturation times of each individual plot. After fermentation, the base wines are aged for several months before being blended to create the final cuvée. The second fermentation takes place in the bottle according to the Champenoise Method, with a resting period sur lattes of at least 3 years before disgorgement.
