It is born in the heart of the wonderful terroir of the Côte des Blancs in a small Recoltant Manipulant estate, which has been cultivating vines in this prestigious area of Champagne for several generations, handing down precious savoir-faire from generation to generation. High-quality grapes and a still artisanal care throughout the production process, from the vineyard to the cellar, allow the creation of a high-end label, distinguished by a particularly smooth and creamy, long and mineral sip.
The Brut Grand Cru Blanc des Blancs 'Aubeline' is a Champagne from a Maison that runs a family-run estate, following the principles of organic farming, without the use of fertilisers or chemical treatments. The Chardonnay vines represent the Maison's great heritage. The rootstocks were created and planted up to 1988 in the Rossiugnol plot and to this day the domaine continues this work of mass selection in collaboration with a local nurseryman. This choice allows for high quality biotypes that have been present in the area for a long time. All the grapes come from the best plots in the Grand Cru of Oger and are cultivated on soils of limestone and chalk, particularly suited to Chardonnay. After the first fermentation, the base wines are matured for a few months before the final blend is created. The second fermentation takes place in the bottle according to the Champenoise Method, with a 24-month rest on the lees.
Vauversin's "Aubeline" is a Champagne Brut Grand Cru Blanc des Blancs that interprets the Maison's style in the pursuit of taste pleasantness, harmony and balance, resulting from the choice of a Brut dosage. In the glass, it is pale yellow in colour with luminous golden reflections and a fine, delicate perlage. The bouquet expresses fragrances of citrus fruits, floral hints, aromas of white-fleshed fruit, apple, peach, nuances of small pastries, toasted almonds and dried fruit. Soft and suave, it has a fruity and creamy, ample and rich entry on the palate, which accompanies a long finish of lively mineral freshness.
