The Blanc de Noirs "PN VZ16" Champagne Bollinger is the emblem of the House, perfectly in line with the predilection for Pinot Noir, which has always been the most important and characterising grape variety in its legendary cuvées. The label was created precisely to highlight the different expressions of the grape varieties in the various terroirs of the estate. Each year, a Cru is chosen as the protagonist of the blend, marking its personality. The PN VZ16 version is made from a majority proportion of grapes from Verzenay, supplemented by Pinot Noirs from other Montagne de Reims crus such as Avenay or Tauxières. Each vineyard is vinified separately and when the cuvée is created, reserve wines are added to the base wines of the vintage to give complexity and aromatic maturity. The second fermentation takes place in the bottle according to the Champenoise Method, with ageing on the lees for approximately 4 years.

In the glass, it is pale yellow in colour with golden reflections. The perlage is very fine and persistent. The entry on the palate is harmonious and creamy, with deep and complex aromas that leave room for tertiary notes. The finish is long, savoury and very fresh. This is a Champagne with a clear gastronomic vocation, to be enjoyed with baked fish, fish in sauce, roast or spit-roasted poultry.
