Abbazia San Giorgio's Canto del Grillo is a rare orange wine based on Grillo, produced on the beautiful island of Pantelleria. In such a wild and pleasant setting, lashed by strong salty winds and beaten by the sun, this Sicilian grape variety has found a habitat that is as difficult as it is highly suited. Born from the crossbreeding of two other historical Sicilian varieties, namely Catarratto and Zibibbo (Moscato di Alessandria), Grillo has gained fame by being included in the blend of the famous Marsala wine, by virtue of its remarkable predisposition to give wines with high alcohol content.
The Terre Siciliane IGT Abbazia San Giorgio CantodelGrillo originates from Grillo grapes only, from a plot of one hectare with an average age of 12 years, located on hilly volcanic soils rich in clay. The vineyard management follows organic farming with the use of some biodynamic techniques. After harvesting, which is carried out by hand with rigorous sorting of the bunches, the grapes are destemmed and then crushed. This is followed by alcoholic fermentation, conducted by indigenous yeasts with no less than 15 days of maceration on the skins, and maturation for 6 months in steel silos before bottling. Throughout the vinification process, the wine undergoes neither corrections nor filtrations.
To the eye, the macerated white Canto del Grillo Abbazia San Giorgio expresses a cloudy orange-yellow hue with golden highlights. The broad olfactory range evokes hints of apricot, orange peel, almond, honey, ginger and aromatic herbs, enriched by intense salty hints. On the palate, it is pulpy and dynamic, marked by light tannicity and marked marine freshness. An authentic and singular Sicilian orange wine, well suited to accompany antipasti and seafood first courses.
