Fattoria dei Barbi Brunello di Montalcino has been produced for over a century, using 100% Sangiovese grapes, typically harvested in the second half of September from vineyards in the municipality of Montalcino. The grapes undergo gentle pressing and destemming, followed by a rapid temperature reduction to optimize polyphenolic extraction. The wine undergoes alcoholic and malolactic fermentation before ageing in wooden barrels of varying sizes for at least 2 years. This is followed by 4 months of bottle ageing before being released to the market.
