The 'Crater' Etna Bianco is a Sicilian label with exceptional territorial adherence, produced on the slopes of Mount Etna by the young artisanal reality Monterosso. The winery takes its name from the homonymous locality located on the southeast side of Etna, in turn called so because of the characteristic reddish coloration that characterizes the soils of the area. Here, the vineyards grow on typical terraces of lava stone that optimize both solar irradiation and the peculiar microclimate of the territory, characterized by constant marine breezes and significant rainfall. These elements particularly favor the cultivation of white grape varieties, such as Carricante.
The Monterosso Etna Bianco 'Crater' is born from pure Carricante grapes grown in accordance with the principles of organic farming. The vines, aged between 70 and 100 years, are rooted in volcanic soils consisting of red volcanic ash and are cultivated using the traditional Etna bush vine system at an altitude of 600 meters above sea level. Following manual harvesting, the grapes are vinified in white through spontaneous alcoholic fermentation in stainless steel tanks, the same wine containers where the mass matures for several months until bottling. The final release on the market takes place after a further rest of at least 6 months in the bottle.
