Case Corini's "Achille" is a red wine made from a blend of grapes from a vineyard dating back to 1950. The selected grapes are destemmed and fermented by indigenous yeasts in oak barrels. A totally artisanal process that results in a full and succulent sip, whose aromas range from intense aromas of ripe red fruits to spicy notes
"Achille" is Case Corini's interpretation of soil and the two local varieties that inhabit it, according to the vision aimed at the most coherent naturalness elaborated by the Corino Method. This red wine is the expression of a single parcel and the natural environment that surrounds it through a process of extreme craftsmanship.
Case Corini gives life to its 'Achille' by vinifying a 60% plus 40% blend, in which the flagship variety of Monferrato meets the noble Langa vine. The vineyard of the same name is located in the commune of Costigliole d'Asti, planted around 1950 and characterised by a soil essentially composed of Asti marl and sand. The rows are mainly pruned according to the espalier method, but with some plants traditionally trained as saplings: the arrangement along the wooden structures allows the foliage to develop until the end of the season, avoiding topping operations. The 2 hectares of the parcel extend along the gentle slopes that outline the landscape between the Langhe and Monferrato, at an altitude of around 250 metres above sea level and offer south-eastern exposure. Fieldwork is done manually, and the harvesting must be planned with great sensitivity to respect the degree of ripeness of the different varieties. Harvesting in small crates results from strictly limited yields with careful selection: the bunches are destemmed and sent to spontaneous alcoholic fermentation in wooden barrels. Maceration on the skins lasts as long as the indigenous yeasts are active, even up to 9 weeks, interspersed with periodic manual punching-down.
"Achille' of Case Corini presents a luminous, deep ruby red colour to the eye. The nose denotes a complex intensity, introduced by ripe fruit notes that veer towards blackberry and black cherry to combine with sweet nuances of vanilla and open towards a delicious tertiary of leather. The sip is rich and tannic in structure, but at the same time juicy and made harmonious by the freshness and mineral trail characteristic of the varietal. A red for a game or more homemade mushroom risotto.
