San Marzano winery's Primitivo di Manduria Dolce Naturale "11 Filari" is yet another confirmation of how wine production in Puglia is now synonymous with the pursuit of quality. It is made entirely from Primitivo grapes, where only the dried fruits of 11 rows of vineyards located in San Marzano and Sava, in the province of Taranto, are used. A wine of great impetus while having a sweet soul, a true ambassador of Puglia and a treasure chest of flavours of a land that gives real food and wine gems.
Dolce Naturale Primitivo di Manduria "11 Filari" San Marzano sees its Primitivo clusters grown in vineyards planted in the alberello style, with vines reaching up to sixty years of age. The assertive character of this Apulian gem is the child of a soil with a strong presence of iron oxides and limestone substrates. Harvesting begins in early October, and the grapes are picked by hand after drying on the vine. Brought to the winery, fermentation takes place at a temperature between 24 and 26°C, where a 10-day maceration follows using indigenous yeasts. An ageing in French and American barriques for 12 months concludes the process.
"11 Filari" San Marzano Primitivo di Manduria Dolce Naturale presents itself to the glass with an intense ruby red with garnet hues as if to recall the red earth where the vineyards have their roots. With overripe cherries and notes of dates and dried figs, the nose is invigorated by spicy hints of black pepper and cinnamon. Carried to the palate, one is enveloped by the sensual softness of this honeyed wine with slight mentholated hints, yet it remains tenacious and vigorous thanks to its unexpected freshness.
