Torraccia del Piantavigna's 'Erbavoglio' is a Metodo Classico Sparkling wine made from Erbaluce grapes from the Ghemme area in northern Piedmont. Produced on clay soils of fluvio alluvial origin and aged for 40 months in the bottle, this Spumante has an almost golden straw yellow colour and a fine but persistent perlage. It releases citrusy aromas of lime and floral hints of hawthorn and pairs perfectly with fish hors d'oeuvres and aperitifs with mixed fried food
The Metodo Classico 'Erbavoglio' Zero Dosage Sparkling Wine by the Piedmontese estate Torraccia del Piantavigna is characterized by a dry and balanced taste based on one of the oldest white grape varieties in Piedmont: Erbaluce. In fact, the presence of this grape variety in the Alto Piemonte region dates back to at least the 1600s, as evidenced by several documents from that period. Erbaluce has always been appreciated for its oenological versatility, as it is successfully vinified in dry, sweet, and sparkling versions, both in the Caluso area and in the province of Novara.
The Metodo Classico 'Erbavoglio' Torraccia del Piantavigna Zero Dosage Sparkling Wine is produced exclusively from Erbaluce grapes grown in the Ghemme area. The vines, cultivated in accordance with the principles of integrated pest management, grow on clayey soils of fluvial-alluvial origin, characterized by a rather low pH. After the hand harvest in crates, the grapes undergo soft pressing, followed by alcoholic fermentation of the must in stainless steel tanks at low temperature. After an adequate period of rest, the base sparkling wine is then bottled with the addition of tirage syrup for refermentation according to the Metodo Classico, accompanied by a lengthy aging period of 40 months on the lees, after which disgorging and subsequent topping up with the same wine take place.
'Erbavoglio' Metodo Classico Zero Dosage Sparkling Wine from Torraccia del Piantavigna has a straw yellow color with fine and persistent effervescence. On the nose, fragrant aromas of white flesh fruit, citrus, and flowers are perceived, with interesting bakery notes in the background. In the mouth, it is creamy and well-balanced in its components, with excellent fresh and tangy verve guiding the long-lasting finish.
