BIANCO 'PROMETHEUS' BAJAJ 2020 DESCRIPTION

Bianco 'Prometheus' from the Bajaj winery is a wine made using the technique of maceration on the skins of white grapes grown in the Roero area. In contrast to the Langhe area, which lies just opposite, separated only by the Tanaro river, the Roero is characterised by soils that are very suitable for the cultivation of white grapes, which express themselves with great elegance and aromatic finesse. This interesting orange wine is produced in an artisanal manner in only a thousand bottles per vintage. It is dedicated to those in search of rare labels with a straightforward profile, capable of bringing out the best characteristics of healthy grapes.

"Prometheus" Bianco di Bajaj was born in the Monteu Roero area, amidst the wonderful sunny hills of this area of Piedmont. The estate is run with the utmost respect for nature, applying careful and sustainable viticulture. The production of grapes of excellent quality is followed by cellar practices reduced to a minimum. The grapes come from Arneis vines cultivated on soils characterised by an abundance of sand. The best bunches are sent to vinification, which takes place with spontaneous fermentation with indigenous yeasts and maceration on the skins in terracotta containers. The wine matures for about ten months in terracotta before being bottled without filtration or clarification and with minimal addition of sulphites.

The white 'Prometheus' wine from the Piedmontese Bajaj estate was created following the success of the red version. The choice of maceration stems from admiration of the work done by Josko Gravner in Oslavia, with the intention of trying to give a new look to the wines of the Roero as well. It presents itself in the glass golden yellow in colour with orange reflections. Complex and rich, it opens on notes reminiscent of ripe yellow-fleshed fruit, candied citrus peel, the sweetness of tropical fruit and acacia honey, and hints of wild flowers. Intense and ample, it has a dense and complex taste with very persistent aromas, crossed by a savoury trail and slightly tannic sensations. Ideal with mature cheeses or noble poultry on the spit.
