Domaine Cauvard is a family-run Burgundy winery located in the fabulous Côte d’Or, specifically in the Côte de Beaune area, a prestigious region that the Domaine interprets in all its complex nuances. The estate is based in the commune of Beaune, a town situated in the heart of the production area, where the Cauvard family has been producing wine for three generations, with Julien Cauvard currently managing the estate. In fact, the family's winemaking origins date back much further, as the Cauvard family are descendants of Simon Gagnerot, a winemaker who purchased his first vineyard in 1681. The family's guiding vision has always been to combine traditional practices with the most innovative techniques and equipment in the sector, aiming for the highest achievable quality.

Embracing a sustainable agronomic approach that excludes the use of herbicides and pesticides, Domaine Cauvard cultivates exclusively Pinot Noir and Chardonnay grapes within their 18 hectares of vineyards. The plots, planted on soils rich in clay and limestone, are distributed across five different villages: Beaune, Volnay, Chorey-les-Beaune, Aloxe-Corton, and Pommard. The harvest is done by hand, followed by alcoholic fermentation at controlled temperatures, mostly in stainless steel tanks, although concrete tanks and wooden barrels are also used. The subsequent maturation phase always takes place in oak barrels, either new or previously used, often on fine lees with the bâtonnage technique. Finally, the wines are bottled with only a light filtration to remove the coarser particles.

The varied production of Domaine Cauvard includes several expressions of the prized climats of the Côte de Beaune, with red and white wines that present the terroir in an always pleasant and accessible manner, sometimes reaching notable peaks of complexity and elegance. The Domaine also boasts several monopoles, meaning single vineyards exclusively owned by the estate, including the Beaune Rouge 'Clos de la Maladière'.
