"SM" is a red wine from the winery Partida Creus, intense and at the same time delicate and elegant. The Sumoll grapes, from which it takes its name, are harvested, destemmed for 50%, macerated for 3 days and fermented by indigenous yeasts. The wine is then aged for 8 months in steel tanks. Sumol "SM" from Partida Creus originated in Spain, specifically in the Bonastre area, famous for the presence of rare and ancient native grape varieties that are often forgotten. The winery is the result of the work project of Antonella and Massimo, architects from Piedmont who decided to indulge their passion for the world of wine by investing in Spanish soil to re-evaluate a forgotten part of the territory. They restored an old farm building using only salvaged and recycled materials to create a structure that could accommodate the grapes they grow and that was in line with their working philosophy aimed at respecting nature and its production phases.
The soil where the Sumol "SM" vineyards of Partida Creus grow are characterized by the presence of clay, sand, limestone and gravel; the climate is Mediterranean with hot, sultry and often dry summers and winters with mild temperatures thanks to the influence of breezes from the sea. Work in the vineyard is characterized by extreme care to encroach as little as possible on the growth of the plants, banishing harmful chemical substances and having only mules and horse help to work the land. Harvesting is by hand; in the cellar, 50 percent of the grapes are destemmed and undergo about 3 days of maceration on the skins: this is followed by alcoholic fermentation with indigenous yeasts and aged 8 months in steel.
The color of Sumol "SM" from Partida Creus is a deep cherry red with bright highlights. The nose releases a bouquet of aromas reminiscent of underbrush, vegetable and herbal notes such as thyme. In the mouth, the structure is elegant and delicate with a pleasant spicy note that persists. It is recommended with traditional sliced and cured meats, grilled red meat and game; also interesting with first courses dressed with important sauces. Excellent wine that lends itself to be consumed at summer barbecues with lifelong friends in country locations or for Romanesque evenings in front of the fireplace with good music in the background.
