This rosé wine comes from a blend of Sangiovese and Uva Giulia, an ancient variety from Lazio that risked disappearing after World War II due to the progressive abandonment of the countryside. Today, its limited diffusion is concentrated in the province of Frosinone, where wineries such as DS Bio are actively engaged in its recovery and valorisation. The estate's hectares of vineyards are spread over small plots, surrounded by centuries-old olive groves, holm oak and oak woods.
DS Bio Rosato 'Indomato' comes from a combination of Sangiovese and Uva Giulia, varieties grown according to the dictates of biodynamics at an altitude of about 600 metres on loose soils rich in sandstone, limestone and skeleton. The grapes are vinified in rosé through brief contact between the must and the skins, with alcoholic fermentation occurring spontaneously thanks only to the intervention of the yeasts present on the grapes and in the cellar environment. The entire processing and ageing process takes place in stainless steel tanks and the wine is finally bottled without undergoing any filtration or clarification.
To the eye, the Rosato del Frusinate DS Bio 'Indomato' shows a brilliant pink hue. Fruity, citrusy and herbaceous scents emerge on the nose, reminiscent of raspberry, currant, grapefruit and herbs. Nimble, fresh and lively taste development, characterised by a pleasant sapid-mineral timbre. A label characterised by a smooth and cheerful drinkability that knows how to lend liveliness to picnics and convivial aperitifs.
