Recioto is undoubtedly one of the flagships of Valpolicella, being one of the sweet wines that most successfully identifies with the territory and tells its own distinctive story. Obviously, in a large number of local producers, only a few manage to stand out clearly, by virtue of fine interpretations and, in the case of Corte Sant'Alda, also thanks to a sensitive and careful interpretation of the territory, which does not contemplate the use of chemical or synthetic substances. The organic regime is only the prelude to an equally careful and conscientious work in the cellar, where all the alcoholic fermentations take place spontaneously so that the liquids freely express their peculiarities while maintaining an extremely fine and centred stylistic code. Authoritativeness and credibility for bottles that cannot be missed in the cellar.
Recioto della Valpolicella wine is made from a typical local blend of Corvina Grossa and Rondinella from the Retratto and Valletta vineyards located 350 m above sea level, with a southern exposure. In the vineyard, as already mentioned, an organic regime is adopted, supplemented by biodynamic practices, to preserve the vitality of the soil and plants. In the case of Recioto, the grapes are left to dry naturally from October to January and then ferment spontaneously with 15 days of maceration on the skins. The liquid then matures for 24 months in 118-litre French oak barrels.
Corte Sant'Alda's Recioto della Valpolicella presents itself in the glass with an intense, dense purple colour. The nose unhesitatingly displays notes of dehydrated plums, coffee and cinnamon, tracing a gourmand yet complex and layered profile. The palate is a masterpiece of finesse, admirably combining sweetness, structure and slight tannic friction with a providential dose of salt and freshness at the top of its category.
