Berritta Dorgali winery's 'Don Baddore' is a warm and enveloping red wine, born from the marriage of Cannonau, an indigenous Sardinian grape variety, and Syrah, a popular international grape variety. The result, after 6-12 months of aging in wood, is a wine with a full and soft sip, dense tannins and a long and persistent finish, characterized on the nose by a broad and deep aromatic profile in which notes of cherry, plum, sweet spices and delicate hints of chocolate stand out. From the marriage between Syrah and Cannonau comes the red wine 'Don Baddore' from the Berritta organic winery in Dorgali, an unprecedented interpretation of this beautiful Sardinian territory. Syrah is the only non-traditional grape variety bred by Antonio Berritta, owner of the winery that bears his name. This famous international variety, spread all over the globe, has shown an exceptional ability to adapt to different soil and climate contexts, yielding surprising results in the Mediterranean, as demonstrated by various experiences in Sicily and Tuscany.
Berritta Dorgali 'Don Baddore' comes from an equivalent blend of Cannonau and Syrah, varieties grown according to certified organic farming principles. The vines, approximately 25 years old, benefit from the altitude of 180 metres above sea level and the granitic nature of the soil. Following manual harvesting, which takes place during the first ten days of October, the grapes are carefully selected, destemmed and mellowed in traditional wooden vats for the 30-day spontaneous alcoholic fermentation in contact with the skins accompanied by repeated manual punching-down. Ageing takes place in steel for 8 months, in French oak casks for 8-12 months and for a few more months in the bottle before the final release.
