The ‘Comete’ from Vignoble Des 2 Lunes is a biodynamic Cremant d'Alsace Brut made exclusively from Pinot Blanc. The winery, now in its seventh generation of winegrowers, is guided by nature and the lunar cycle in the production of its wines, which, moreover, are aged on the lees for a long period, a trademark of Vignoble Des 2 Lunes. Creamy and well-balanced, this Cremant presents citrus, hazelnut aromas and hints of butter and brioche, suitable with fish and shellfish starters
The Cremant d'Alsace Brut 'Comete' from the biodynamic estate Vignoble des 2 Lunes is an Alsatian Metodo Classico made from Pinot Blanc grapes, known for its soft and refined style. In the diverse production of the Vignoble des 2 Lunes winery, a prominent role is certainly played by sparkling wines, a type interpreted by the Buecher family, inspired by the great Champagnes produced by small growers. Furthermore, to allow maximum expression of the terroir, these Cremant d'Alsace wines are made with very low dosages, minimizing the alteration that residual sugars could bring.
The 'Comete' Vignoble des 2 Lunes Cremant d'Alsace Brut is made solely from Pinot Blanc grapes grown according to the principles of biodynamic agriculture on soils composed of clay-limestone marl and granite. Harvesting is done by hand with careful selection of the bunches, which are then destemmed and gently pressed. At this point, the must undergoes spontaneous alcoholic fermentation in temperature-controlled stainless steel tanks, with the base sparkling wine subsequently bottled with the addition of liqueur de tirage for refermentation according to the Metodo Classico. Aging on the lees then lasts for 36 months, after which disgorging and subsequent Brut dosage are performed.
The Cremant d'Alsace 'Comete' Brut from Vignoble des 2 Lunes has a straw yellow appearance with a very fine perlage. The aroma unfolds with sweet and inviting sensations of citrus, apricot, hazelnut, brioche, and yeast. The palate shows excellent balance between the creamy and round effervescence and the pronounced freshness, elements that define an elegant progression with excellent taste-olfactory correspondence, finely mineral.
