On the hills of Valpolicella, in the classical area of Fiumane, there is the farm Valentina Cubi, managed by the owner, a former elementary school teacher that has given the winery her own name, and her husband Giancarlo, winemaker since 1969. The farm covers 13 hectares vineyards, orchards and olive groves, where, in the 10 vineyards, growing the native grape Corvina (father of Valpolicella, Amarone and Recioto), supported by Corvinone and Rondinella.
The land, which is often divided into terraces, contains rock dispersed in clay and has a water holding capacity, so that it does not need irrigation. The vineyards, which have been recently converted to organic, are organized with the Guyot: thanks to this system of farming the old vines, low yield, they can cope better with climate change and the grapes are protected from the intense summer heat. The organic approach makes use of green manure and micro-organic vegetable, no animal manures, and provides for the autumn planting of some grasses to aerate the soil and increase the organic activity. Thanks to these procedures, carried out with the help of the oenologist Alessandro Filippi, the entire production company has earned the organic certification.
The winemaking process follows traditional procedures and consolidated: the grapes are picked by hand and selected their entry into the cellar; the fermentation takes place in stainless steel tanks conical; replacement are the main method of extraction.
The wines are continuing successfully the tradition of the Valpolicella wine but also represent the result of a policy of innovation that is expressed on the cultivation of vineyards and which gives peculiarity to this production of excellence.
