In Catalonia, just a few kilometres from the city of Barcelona, El Jardì dels Sentits produces expressions of terroir by pursuing a winemaking philosophy that is highly respectful of tradition, but perfected through the use of the most innovative technologies and knowledge in the sector. Although the official foundation of this family-run winery dates back to 1998, its origins are older. Today, the third generation is at the helm, represented by Blanca, who has taken up her grandfather's dream of producing quality Cava. 'El jardì dels sentits' literally translates as 'the garden of the senses', an evocative name that refers to the discipline of Sensory Science studied by Blanca. In addition, the winery offers viticulture courses and, very soon, tastings within the rows to stimulate the senses.
The plants at El Jardì dels Sentits benefit from the typically Mediterranean climate and the constant presence of sea breezes, as well as from the richness of limestone and other minerals in the soils, which are composed of different types of clay. The management of the 6 hectares of vineyards, some with vines over 70 years old, follows the dictates of biodynamic agriculture and has been certified organic since 1998. The vines cultivated include the indigenous Xarel-lo, Macabeo and Parellada for the white grapes, and Sumoll and Llebre among the black varieties, alongside the allochthonous varieties Syrah, Cabernet Franc and Marselan. The grapes of the different varieties are harvested and vinified separately in order to enhance the unique character of each parcel. With this in mind, the wines are neither clarified nor filtered and at bottling have very low levels of total sulphur dioxide.
The El Jardì dels Sentits winery specialises in the production of sparkling wines made using the Ancestral Method and the Classical Method with very low dosages. The range of labels on offer is wide, but each bottle is produced in very limited quantities. Those of Blanca are genuine and spontaneous interpretations, capable of encapsulating in a bottle all the Mediterranean aromas of this magnificent area of Catalonia.
