Vin Santo del Chianti Classico di Isole e Olena was born in Barberino Val d'Elsa, a town halfway between the provinces of Florence and Siena, the heart of the Chianti Classico appellation. The business started in 1956 with the De Marchi family who decided to invest in some land to expand their Piedmontese winery. The aim has always been to produce wines of excellent quality, but the work was further strengthened by the arrival in the 1970s of Paolo De Marchi: after learning techniques and experiencing new production methods in California, he returned home, bringing new life to the business. Today the winery ranks among the best on the Italian and international wine scene with a clear plan for the future aimed at increasing quality.
The Malvasia and Trebbiano grapes of the Vin Santo del Chianti Classico of Isole e Olena grow in a predominantly continental climate, characterised by hot, sultry summers and harsh winters, often with heavy snowfall. The soil is composed mainly of clay, limestone and sandstone, ideal for the final product to have character and a strong structure. The altitude is between 400 and 450 metres above sea level; the grapes are grown with total respect for the natural phases of growth and development of the plants, and it is important to preserve the state of the ecosystem surrounding the flourishing and luxuriant vineyards. The grapes are harvested manually; in the cellar, the grapes ferment inside filled kegs so that there is maximum oxygenation. It matures 7 years in kegs.
The Vin Santo del Chianti Classico of Isole e Olena presents itself to the eye as a beautiful amber yellow with intense golden reflections. The bouquet of aromas is broad and reminiscent of wildflower honey, citrus peel such as orange and lemon and notes of dried fruit such as hazelnut and almond; on the palate it is sweet, enveloping and delicate with an excellent persistence that entices glass after glass. It goes perfectly with dark chocolate dishes, small dry pastries, pandoro and panettone; also ideal with mature cheeses. Perfect to accompany the end of a meal, enjoying an authentic product with genuine and authentic flavours.
