The 'Tinaio' Rosso represents a personal interpretation of the terroir devised by Fattoria di Sammontana. It is a red wine produced from a selection of blackberry varieties, both native and non-native that the winery believes best reflects the vintage. Located in Montelupo Fiorentino, in the Colli Fiorentini area, Fattoria di Sammontana constitutes one of the most interesting local artisanal wineries, with a tradition going back over a century. The 'tinaia', or 'tinaio', is the Tuscan term for the room dedicated to the fermentation of wines.
Fattoria di Sammontana's Tuscan Rosso 'Tinaio' comes from a selection of Syrah, Sangiovese and Colorino that varies depending on the vintage. The vineyards from which the grapes come, organically and biodynamically managed, are partly 40-50 years old and partly 15-20 years old. After the manual harvesting of the grapes, slow spontaneous alcoholic fermentation takes place thanks to the exclusive intervention of indigenous yeasts. Maturation lasts a full 24 months and takes place in small 15-hectolitre oak casks, followed by at least one year of further ageing in the bottle. During the entire vinification process, the mass undergoes no filtration.
