Pievalta's Metodo Classico Dosaggio Zero "Perlugo" is one of the most interesting labels in Italian sparkling wine production from indigenous grapes. Thanks to the experience of Barone Pizzini, owner of the Marche winery, the wine succeeds in highlighting Verdicchio's particular propensity for sparkling. Its natural basic freshness and a perfect selection of grapes, harvested at the right time of ripening, give a clear and fragrant sip, that conquers for its immediacy. It is a bottle with a simple and fruity character, ideal when you want to taste an excellent Metodo Classico, but not too structured and complex.
Pievalta's Dosaggio Zero "Perlugo" Spumante Metodo Classico was born in one of the most dynamic and innovative wineries in the area, which immediately espoused the principles of biodynamic agriculture, in full respect of the natural environment. It is made from Verdicchio grapes harvested from two different plots on the estate. One part comes from the Maiolati Spontini vineyards, cultivated on clay-limestone matrix soils, and one part from the San Paolo cru, which is located on Mount Follonica, about 300 meters above sea level, in a very ventilated area characterized by valuable sandstone and marl soils of ancient marine origin. After the grapes are gently pressed, fermentation takes place in temperature-controlled steel vats. The base wines mature for six months before the creation of the final cuvée and the second fermentation in the bottle according to the Metodo Classico, with a rest on the lees of about 15 months before dégorgement.
Pievalta's "Perlugo" is a Classic Method Dosage Zero that captivates with its youthful fruity exuberance. Its fresh and savory character makes it perfect to enjoy at aperitif time, with seafood appetizers or delicately flavored fish dishes. To the eye, it has a straw-yellow color with bright greenish reflections and a perlage of good fineness and persistence. The bouquet is intense, characterized scents of white flowers, orange blossom, lime zest, citrus fragrances, aromas of white-fleshed fruit, hints of bread crust, nuances of medicinal herbs and balsamic plants. The palate has a good structure, with a juicy fruity sip, shot through with a clear saline vein, accompanying toward a finish of satisfying mineral freshness.
