Ferrari's Perlè Zero is a Trento DOC that does not require the addition of "liqueur d'expédition" at the end of maturation; it is a product with which the winery aims to represent the purest and most essential soul of Chardonnay, through a long period of ageing on the lees. In fact it takes six years to develop the unique profile of this sparkling wine, remarkable in its aromas and intriguing on the palate, thanks to a dry sip of pleasant freshness.
A meticulous process gives rise to this Trento Perlè Zero by Ferrari, a Spumante made from a single grape variety, Chardonnay. The grapes come from vineyards that grow in the shadow of the imposing Trentino mountains, situated at an altitude of between 300 and 700 metres above sea level and facing south-east and south-west; after the harvest, the first fermentation takes place in both steel and wooden containers, to increase the complexity of the final product; then the wine is re-fermented for the second time in the bottle, following the rules of the Champenoise Method and remaining in contact with its lees for six years.
Perlè Zero is a Spumante Trento DOC with a straw-yellow colour, slightly tending to gold; the perlage is fine and intense. The nose is decidedly profound, offering varied notes that range from spicy and fruity to aromatic herbs. On the palate, it is dry, clean, characterised by an energetic, mineral sip, underpinned by an excellent freshness; it ends with a striking persistent finish. A label with which Ferrari confirms its sparkling wine vocation, establishing itself as one of the reference points in Italy for the production of sparkling wines.
