Aeblerov's 'Cox I Pæren' Cider is a fermented beverage with a lively and fun spirit handcrafted in Denmark. The story of this young production company began in 2011 in a small garage in Limfjordsvej, Vanløse, with partners Morten Sylvest-Noer and Christopher Melin, then food science students at the University of Copenhagen. After their first experiments in the world of micro-fermentations, Morten and Christopher marketed their first cider in 2015, enjoying great success in the following years partly because of the authenticity of their products. The appellation 'Cox I Pæren,' literally "Cox in the Pear," refers to the fact that this drink is made from a combination of Danish pears and Holsteiner Cox apples.
Aeblerov Cider 'Cox I Pæren' is made from an assemblage of apples of the Holsteiner Cox variety and Anne and Concorde pears from Lærkehøj, all organically grown fruit. Alcoholic fermentation is entrusted exclusively to indigenous yeasts, and then the liquid is bottled and subjected to a light spontaneous refermentation so as to retain a pleasant effervescence. As this cider is not filtered, it retains natural sediment.
