The artisanal production reality of Petritegi presents the Monovarietal Cider 'Alai', a cider made from apples with the unmistakable Basque identity. It is a single-variety cider produced with Txalaka apples, an indigenous variety of the Basque Country characterized by rather large fruit with a yellow-greenish color. This variety, harvested very late, is particularly appreciated in cider production due to its remarkable juiciness and refined aromas. The appellation 'Alai' comes from the Basque language and means "joy", "happiness", a sentiment that the Otaño family feels both during the production of this cider and every time they taste it.
The 'Alai' Petritegi Monovarietal Cider is 100% derived from Txalaka variety apples grown in the Basque Country under the quality label of the Euskal Sagardoa designation of origin. In particular, the fruit comes from a selection of the best orchards of Petritegi's local suppliers and is harvested at optimal ripeness. After pressing, the juice undergoes alcoholic fermentation and, subsequently, the cider is left to mature on the lees, without racking, in order to enhance its aroma and flavor. Throughout the entire process, the use of filtration operations and sulfite additions is excluded.
The Monovarietal 'Alai' Cider from the Petritegi winery has a straw yellow color with greenish hues. The refined olfactory range stands out for its vivid hints of white-fleshed fruit, especially apple and pear. Remarkable freshness on the palate accompanies the pronounced fruity sensations throughout the entire tasting progression. Before opening, it is recommended to invert the bottle and gently shake it in order to resuspend and dissolve any fine sediments.
