RUM PARANUBES DESCRIPTION

Paranubes Rum is a distinctive Mexican artisanal rum that is the result of a sustainable and traditional production process. In his 14 hectares of sugar cane, Paranubes farm owner Jose Luis Carrera grows four different varieties of this tropical plant: Caña Dulce, Caña Morada/Negra, Caña Dura and Caña Amarilla/Criolla. From the union of these varieties comes his aguardiente de caña, literally "cane distillate," as rum is called locally. One of the dogmas guiding Jose Luis's production is that he does not add water to his distillates to decrease their alcohol content, preferring instead to blend higher proof rums with lighter rums to find the right balance without distorting the product.

Paranubes Rum is processed from only sugar cane mainly of the Amarilla/Criolla variety, combined with smaller percentages of Caña Dulce, Caña Morada/Negra and Caña Dura. The plants are grown according to organic farming principles, and after manual harvesting, the sugarcane juice is extracted. This juice then undergoes spontaneous alcoholic fermentation in pine wood vats and the resulting fermented product is subsequently distilled in a copper column still heated by a live fire manually fed by the spent cane fibers. The rum is finally bottled without the addition of additives or water.

On visual inspection, Paranubes Mexican Farm Rum has a transparent and crystalline appearance. Intense and singular hints of olive, tomato leaf and olive press overlap on the nose, accompanied by hints of ripe fruit. The sip is soft, full-bodied and persistent, with surprising balance despite the significant alcohol content.
