At the gates of Le Moule in Grande-Terre in Guadeloupe is ground sugarcane still with windmills typical of this area, and is extracted vesou (cane juice which is not extracted from virgin sugar) with machinery steam. In maison Damoiseau live stills continues to a column in a time where you get a spirit of low alcohol but very fragrant. Damoiseau is the only company to have old stock of rum up to 15 years of age and still a few barrels of the wonderful 1953 which is probably the oldest and historic rum on the market. The "Vieux Agricole" XO Damoiseau is an agricultural rum assembled with old rum agricultural minimum age 4 years aged in oak barrels that previously contained bourbon. From dark amber color, the nose is fruity with notes of vanilla, chocolate, caramel and cinnamon. The palate stand sweet notes, spicy, soft and unleashes memories of dried fruit and plum extended by notes of caramel. Long finish with hints of vanilla, roasted coffee beans, leather and tobacco.
