The Ribolla Gialla is one of the most identifiable white wines of Borgo San Daniele. This beautiful family-run business cultivates some twenty hectares of vineyards in the prized Cormons area, following environmentally friendly principles and biodynamic practices. The mild, breezy climate and soils composed of the famous 'ponca', or sedimentations of marl and sandstone of ancient marine origin, have been an ideal habitat for white varieties for centuries. The Ribolla Gialla grapes come from the vineyards located in the hilly area of Giassico, near Cormons. After a short pre-fermentation maceration, the grapes are gently pressed and the must is fermented in temperature-controlled stainless steel tanks. The wine rests on the lees in steel tanks until the following spring, when it is bottled.
Borgo San Daniele's Ribolla Gialla authentically represents the terroir of origin. This ancient autochthonous variety gives a straightforward and simple wine, perfect to be enjoyed as an aperitif or to accompany delicately flavoured hors d'oeuvres or seafood dishes. To the eye, it has a light and luminous straw yellow colour. Fine and delicate, it has a bouquet characterised by floral scents of orange blossom, hawthorn, wild flowers, notes of citrus fruits, lemon peel, aromas of green apple, cartucciuaro melon, white peach, and nuances of aromatic herbs from the Mediterranean maquis. On the palate it is taut and fragrant, the sip is limpid and upright, it flows into a savoury finish of citrine freshness.
