The Privo Rosso di Alepa is an interesting expression of Cabernet Sauvignon grapes from the Caserta area. It refines exclusively in steel for about 12 months to maintain a bright and fruity organoleptic profile, with tones of ripe cherry, raspberries and pomegranate, and then changes to herbaceous, licorice and undergrowth tones. The sip is fresh, medium tannic and slender, not opulent at all, with invigorating and well-savoury juiciness
The Privo Rosso Alepa is a splendid expression of Cabernet Sauvignon, successful and vital, capable of making even the most sceptical about international grape varieties reconsider. Yes, because it is quite common among fans of artisanal wines to turn up their noses when speaking of Cabernet Sauvignon and Merlot planted in their homeland: 'Too fat, too sedate, too herbaceous'. Well, once you drink Paola's Privo Rosso, these banal preconceptions vanish as quickly as the liquid in the glass. 3 hectares of vineyard in the Caserta area, cultivated without artifice or shortcuts to enhance what matters most: the land. In pursuit of this goal, it was decided to focus on traditional local vines, even those that have been somewhat set aside, such as Pallagrello Bianco and Pallagrello Nero, flanked by a few rows of Cabernet Sauvignon. Sincere bottles, devoid, in the true sense of the word, of useless tinsel and sophistication, but always satisfying and expressive.
The Privo Rosso Alepa wine is a pure expression of Cabernet Sauvignon, obtained from a 1986 vineyard 250 metres above sea level on clay soils. In the vineyard, green manure and respectful and never-intrusive agriculture are practised. In the cellar, fermentation takes place spontaneously using only indigenous yeasts. No clarification or filtration with ageing in stainless steel tanks for 12 months.
The Privo Alepa peeps into the goblet with its dark, impenetrable red colour, typical of the variety. The nose is elegant yet direct, rich in suggestions ranging from raspberry to frigitello, from pomegranate to liquorice. It thus draws an absolutely fresh and airy profile, which contrasts with the stereotypical idea one has of Cabernet as if to testify to the importance of place and the producer's hand. Dynamic and lively on the palate: pure juice bathes the palate, thanks to a perfect combination of freshness and savouriness. A great cross-section of terroir.
