L'Ecru was created in the name of celebration of Sicilian wine classicism, with a distinctive interpretation of grape Zibibbo signed by Firriato. The winery was created in the '80s, by the will of a young entrepreneur who fell in love with the beautiful terroir of the Agro di Trapani, marked by agricultural and wine culture for thousands of years and blessed by a wild nature. The objective of Salvatore Di Gaetano, real soul of Firriato, has always been to produce wines with a strong territorial personality, but also with a remarkable international vocation: for this reason in the crus of property it is possible to find the most famous French varietes along with native Sicilian grapes, resulting in combinations of rare elegance. L' Ecru, the first and only sweet wine of the range Firriato, was created in one of the most historic parcels of the company, the estate Borgo Guarini, with about 140 hectares of vineyards. The landscape, soft and sinuous, stands out for the richness of soil, made of clay and limestone, with a right balance between the mineral components present. The grapes coming from this vineyard for the production of L'Ecru are in part collected and dried on racks, in part left on the vine to overmature. The result is a unique wine within the range Firriato: dynamic in the aromatic side and with a sweetness never overwhelming, indeed fresh, it is appreciated in combination with freshly baked sweet pastry, but it's surprising in pairing with cheese or foie gras ...
