Nobile di Montepulciano "Asinone" from the Poliziano winery is a full-bodied and structured red wine produced in the municipality of Montepulciano, in the province of Siena, Tuscany. This wine is made from pure Sangiovese grapes from a single vineyard with a southern, southwestern exposure and located on rolling hills located at about 350-400 meters above sea level. The vines, which are of different ages, are trained using the spurred cordon method on skeleton-rich soils characterized by clay-loamy soils. The winery is a family-run business, owning about 165 hectares under vine, now run by Federico Carletti, who taking over the reins from his father has succeeded in just a few years in proposing an innovative and modern production philosophy, becoming one of the most appreciated names in all of Tuscany.
"Asinone" Nobile di Montepulciano di Poliziano is made from carefully selected grapes harvested by hand in small boxes towards the end of September. The bunches, brought to the winery, are destemmed and gently crushed and then undergo alcoholic fermentation, with frequent daily pumping over, in temperature-controlled stainless steel tanks with maceration on the skins for about 20-25 days. This is followed by racking with pressing, after which the wine is aged in French oak tonneaux for at least 16-18 months before being bottled and ready for release.
