The "Premium" is a Lambrusco of Sorbara whose grapes, after harvest, undergo a light maceration, then ferment and undergo the sparkling process in an autoclave, following the principles of the Martinotti or Charmat Method, introduced by the Chiarli winery for the first time in Emilia-Romagna in 1959. The wine then, before being bottled, undergoes ageing on its own yeasts for three months.
