Bodega K5's Kaiaren is a pure Hondarrabi Zuri produced in the Basque Country, in the steep hills of Aia, a few steps from the Cantabrian Sea. It is a white wine with a great capacity for ageing that undergoes cold maceration before fermenting and refining in steel tanks. As a final step, it spends 24 months in the bottle; it is thus able to release all its freshness and minerality in the glass, with floral, smoky and saline aromas
The 'Kaiaren' Limited Edition by Bodega K5 represents a precious and complex interpretation of the Basque land of Getariako Txakolina, an area overlooking the Cantabrian Sea whose oceanic currents strongly influence the viticulture of the region. The idea of producing this limited edition label was born with the exceptional 2016 vintage, which convinced the winery to set aside a small portion of the production to create something innovative and unrepeatable. This wine, which received special attention throughout the entire process, is the result of Bodega K5's knowledge of great aging vintages.
The Limited Edition Bodega K5 'Kaiaren' is a 100% Hondarrabi Zuri from vines grown using sustainable practices on granite soils rich in slate schist, at an altitude of approximately 300 meters above sea level. Once harvested, the grapes undergo a cold pre-fermentation maceration followed by gentle pressing, with only the free-run juice undergoing spontaneous alcoholic fermentation in stainless steel tanks at controlled temperature. Aging then takes place in stainless steel on fine lees for a total of 48 months, followed by an additional 24 months of bottle aging before the final limited release onto the market.
In the glass, the 'Kaiaren' Bodega K5 Limited Edition reveals a pale straw yellow color with brilliant golden hues. The evocative aromatic profile unfolds with mature aromas of quince, peach, citrus, white flowers, and dried fruit, surrounded by peculiar hints of incense, flint, and smoke. On the palate, it is fresh, complex, and crystalline, with a vibrant and dynamic progression leading to a long, savory-mineral finish.
