The red wine 'In Absentia' constitutes the flagship label of Diego Losada's artisanal winery La Senda. It is a pure expression of Trousseau, also called Bastardo and Merenzao, a red grape variety native to Jura, in eastern France, but very widespread in various viticultural areas, from Portugal to Spain via California. Located in Ponferrada, in the El Bierzo area, La Senda consists of 3 hectares of vineyards distributed in small, pedologically heterogeneous plots. Diego's goal is to reveal the maximum expressive potential of the place, adopting agronomic and oenological practices that are as minimally invasive as possible and always respectful of the terroir.
La Senda 'In Absentia' is made from Trousseau grapes only, from several old plots with vines between 70 and 90 years old, rooted on clay-limestone soils with the presence of quartz at 550 meters above sea level. Following harvest, the grapes are transferred immediately to the winery, where alcoholic fermentation takes place in chestnut barrels, with 3-4 days of contact between the must and skins. Once the fermentation process is complete, the wine is aged in French oak barrels for 9 months before being placed in bottles without undergoing filtration or sulfitation.
In the glass, La Senda's 'In Absentia' is luminous ruby red in color. The aromatic bouquet is rich and full, characterized by fruity scents of cherry, blackberry and morello cherry that meet notes of aromatic herbs. On the palate it is characterized by pleasant juiciness and agile tannins, as well as a good final persistence consistent with the fruity sensations on the nose. A genuine and gastronomic Galician interpretation, ideal to pair with various main courses.
