This Barbera Grappa is a Riserva that is aged in Sherry Casks after an initial period of ageing in oak barrels. This additional final passage allows it to increase the range of aromas that can be perceived in the tasting, where sweet notes echo, recalling in the distance some of the notes characteristics of Sherry. Barbera Riserva Grappa aged in Sherry Casks is made by the Sibona distillery from the fresh pomace of Barbera, a red grape variety widely grown within the regional borders of Piedmont. Distillation is carried out using copper stills, and every single stage of the production process is carefully monitored. At the end of the working process, the Grappa is matured in oak wood for 18 months and then transferred to barrels containing Sherry for another 12 months, where it rests, acquiring additional nuances and scents that contribute to increasing the scope of the olfactory bouquet.
