Mosnel's Franciacorta Pas Dosè is a label that perfectly expresses the rigorous and elegant style of a winery, which has been among the best interpreters of the Franciacorta terroir for years. The cuvée is composed of a majority of Chardonnay to which small percentages of Pinot Blanc and Pinot Noir are added. Meticulous attention to vineyard work, the use of partial wood fermentations, low dosages and long ageing on the lees result in wines of great finesse and expressive complexity. Clear and vertical, it is ideal for enjoying throughout a meal with a seafood menu of delicate flavours.
Metodo Classico Pas Dosé comes from one of the most interesting wineries in the Passirano area. Mosnel is a historic name in the area and runs under organic farming, a beautiful estate of about forty hectares. The Chardonnay, Pinot Blanc, and Pinot Noir vines are grown on gentle hillsides, facing east and southeast, on soils of morainic origin, rather loose and rich in pebbles. After the soft pressing of the grapes, the flower must ferment in temperature-controlled stainless steel tanks, except for a small portion that ferments in small oak barrels. After a short period of maturation, the base wines are blended, and the second fermentation takes place in the bottle, according to the Metodo Classico, with a minimum ageing on the lees of at least 30 months.
Franciacorta Pas Dosè Mosnel is the choice of those who love absolute purity, of those who are looking for a Metodo Classico capable of interpreting the character of the terroir at its best and bringing to the glass the typical mineral freshness of the best Franciacorta. To the eye, it has a brilliant light yellow colour, crossed by a fine and persistent perlage. The bouquet is refined, with citrus scents of orange blossom, lime zest, aromas of green apple, white peach, bread crust, dried fruit and delicate nuances of medicinal herbs. The palate is limpid and austere, with a taut, deep sip that runs vertical and saline toward a lingering finish of vibrant freshness. Definitely among the best Pas Dosé wines in Franciacorta.
