Cantina Montina's Extra-Brut is a Franciacorta that plays on the notes of finesse and expressive purity, with a fresh and essential bouquet that anticipates a dry and vertical profile, suitable for those who love the Metodo Classico in its most direct and linear expression, with already some pleasant evolutionary notes of refinement typical of Chardonnay, which constitutes the majority percentage of the cuvée. A label to be tasted at aperitif time or with light appetizers, perhaps of raw fish, that enhance the mineral freshness and savoriness of its sip.
Franciacorta Extra-Brut Montina is made from grapes that come mainly from vineyards at least 20 years old, cultivated in areas characterized by soils of morainic origin, with the presence of skeleton and pebbles, which contribute to giving the wines a particular connotation of mineral freshness, which is well suited to the profile of an Extra-Brut. The cuvée comes from a blend of Chardonnay (85 percent) and Pinot Noir (15 percent). After harvesting, the grapes undergo a double pressing, the first very soft with the Marmonier vertical press and the second with classic horizontal lung presses. After the white vinification of the base wines and their aging for a few months, the cuvée is created and drawn. The wine then rests on the lees for a minimum period of 30 months before dégorgement.
Franciacorta Extra-Brut has a decisive, essential character with great expressive cleanliness, as required of an Extra-Brut, which, by virtue of low dosage, must bring the characteristics of the terroir and grapes to the fore above all. In the glass it has a straw-yellow color, with delicate and brilliant golden reflections. The perlage is fine and persistent. The nose expresses elegant notes of citrus, ripe fruit, accompanied by hints of bread crust and toasted nuts. The palate relaxes on enveloping aromas of yellow fruit, candied citrus peel, well supported by lively freshness and a pleasant savory finish.
