"Eutopia" from Piedmont winery Ilaria Salvetti is a classic Orange Wine. It is made by vinification with maceration on the skins, which gives the wine considerable aromatic complexity and a rich structure. The choice of a final vinification in the wood helps to give the bouquet elegant aromas of tertiary evolution, which contribute to its appeal. Because of its particular characteristics, it possesses a great gastronomic vocation. It goes very well with white meats, roast or spit-roasted poultry or with a board of medium-aged cheeses.
Ilaria Salvetti's "Eutopia" wine is made from white grapes harvested in a hilly area at an altitude of 350 meters above sea level. The vines are rooted in soils rich in the skeleton, characterized by the presence of pebbles, gravels and sands of morainic origin, resulting from the retreat of a very ancient alpine glacier, which shaped the entire area. The vines are raised with pleasant respect for the environment, with treatments using only sulfur and copper and no chemicals. Harvesting is done manually at full maturity in the latter part of September. After destemming, the grapes are placed in wooden vats, and fermentation takes place spontaneously, with indigenous yeasts and a 15-day maceration on the skins. After racking, it remains in used oak barrels before being bottled.
