Capovilla's Vesuvius Apricot Distillate encapsulates the sweet, pulpy quality of apricots grown on the slopes of Vesuvius and the mastery in the art of distilling of Vittorio Gianni Capovilla, known as the "Capo." His distillery was founded in 1974 in the foothills of the Vicenza foothills of the Alps with the premise of making only distillates of the highest caliber, produced from superior raw materials. Over the following decades, the "Capo" established himself as a master of fruit-based spirits, produced from ingredients grown near the distillery or sought after in other highly selected places, such as apricots from Vesuvius.
Capovilla Distillato di Albicocche del Vesuvio is made from apricots of the ancient Pellecchiella variety grown on the sunny slopes of Vesuvius. The fruits are harvested when fully ripe and carefully selected, then pitted and mechanically processed into a puree. This is left to ferment spontaneously thanks only to the intervention of indigenous yeasts and, after a few days, the fermented product is slowly distilled in a discontinuous Muller bain-marie still. Then, the precious liquid is placed to mature in stainless steel tanks and is then diluted with pure Monte Grappa spring water.
To the eye, the Distillato di Albicocche del Vesuvio (Vesuvius Apricot Distillate) from the Veneto-based Capovilla production company is crystal clear.
