CREMANT DE BOURGOGNE NATURE CÉLINE ET LAURENT TRIPOZ DESCRIPTION

Cèline et Laurent Tripoz's Cremant de Bourgogne Nature is a sparkling wine of great distinction, rivalling its Champagne counterparts. The Cremant de Bourgogne is the oldest among the eight AOCs in France, but this bottle stands out significantly in the region's production because Cèline and Laurent have always chosen to vinify their own grapes, unlike most farmers who contribute to cooperatives. The vineyards are located in the small village of Loché-Macon, where both Cèline and Laurent were born and raised. The bell tower on the label belongs to the village church, dating back to the 12th century, paying tribute to the territory where they saw their passion and dedication come to fruition.

Cèline et Laurent Tripoz Cremant de Bourgogne Nature is made from 100% Chardonnay grapes, which constitute 80% of the 11 hectares of the winery. The fermentation of the grapes is spontaneous and takes place in stainless steel tanks, while ageing on the lees lasts at least 12 months. It is a dosage zero, meaning no liqueur d'expédition is added, along with sulfites, which are added in a minimal percentage only at the corking stage. The Tripoz family's philosophy departs from all the teachings from the region's tradition: since the early 2000s, all the vineyards have been converted to biodynamics. For them, finding sustainable solutions for the plants and in the cellar doesn't mean fighting against them but fighting alongside the environment, observing and deducing.

Cèline et Laurent Tripoz's Cremant de Bourgogne Nature leaves its courageous mark in every sense. The colour is an intense, full golden hue. The perlage is fine and persistent, mesmerizing in the glass. The emerging scents tell us of white flowers and ripe fruit, with hints of brioche and pastry. The creaminess perceived on the palate creates an enveloping vortex that never overflows, remaining poised and balanced, with an acidic edge that makes it both long-lasting in the mouth and over time. If we were to follow Proust and his madeleine, this Cremant brings back memories of the sun in the fields, the breeze on the shore, and the scent of oranges.
