Jean Hû's "Didascalie" Extra Brut Champagne is produced in the southern part of Champagne in the small village of Vincelles. Jean Hû began the production of Champagne after the end of the Second World War, precisely in 1948: the working philosophy has always been to work the land respecting its times and phases in order to produce wines of unquestionable quality. In the 1970s the business was taken over by his son Christian, who made some changes in the architecture of the winery and in the machinery with a new pressing center inaugurated in the early 1990s. Christian's daughter, Aurélie, and her husband took over the winery a few years ago with plans to carry on the family tradition, making it even better for future generations.
The Pinot Meunier, Chardonnay and Pinot Noir grapes in Jean Hû's Champagne Extra Brut "Didascalie" grow on soils mainly composed of clay and limestone, which give the wine's structure an important character. The exposure of the vineyards is south, which ensures that the grapes are fully exposed to sunlight for excellent ripening. The climate is continental with hot, sunny and sultry summers and winters with cold temperatures. Each season involves different work in the vineyard so that it can always be efficient for harvest time: pruning takes place in the winter so that the shoots can grow healthy again in the spring, when the vegetative cycle begins again; in the summer, the foliage is aired so that the clusters get all the sun they need to ripen and get to the moment of hand picking in perfect condition. In the cellar, alcoholic fermentation takes place in steel and is refermented in the bottle according to the Champenoise Method. It ages 24 months on the lees.
