With its deep and smooth style, the Blanc de Blancs Extra Brut 'Eclat d'Or' Champagne by winemaker Justin Maillard faithfully expresses the qualities of Chardonnay from the Côte des Bar. Although Pinot Noir cultivation predominates in the Côte des Bar, Chardonnay still plays a significant role in the area, giving rise to Champagnes with different characteristics compared to those of the Côte des Blancs. This is largely due to the soil composition of the two regions, with the typical chalky soil that characterizes the Côte des Blancs and the Kimmeridgian soil that distinguishes the vineyards of the Côte des Bar.

Justin Maillard's Champagne Extra Brut 'Eclat d'Or' Blanc de Blancs is a 100% Chardonnay from vines cultivated without the use of fertilizers, herbicides, and other synthetic chemicals. In the cellar, the grapes are gently pressed to extract the must, which is then conveyed into stainless steel tanks where spontaneous alcoholic fermentation occurs thanks solely to the intervention of indigenous yeasts. The vintage wine is subsequently blended with a percentage of reserve wine and then bottled with the addition of liqueur de tirage for bottle refermentation according to the Champagne Method. Aging on the lees lasts for over 72 months, after which the sparkling wine undergoes disgorgement and subsequent Extra Brut dosage. Throughout the entire process, clarification operations and cold treatments are excluded, with sulfur additions kept minimal.

The Champagne Justin Maillard Blanc de Blancs Extra Brut 'Eclat d'Or' exhibits a surprising amber-yellow color with fine and persistent bubbles. The nose is characterized by broad perceptions of grapefruit, apple, pear, citrus zest, and sulfur, while the taste is fresh, mineral, and of great complexity.
