This Blanc de Noirs Dosage Zero is a Champagne by maison Remy Massin that comes from a cuvée made from the best Pinot Noir grapes. The bunches are carefully selected to ensure richness of aroma and perfect ripeness, so that they can express harmonious wines even without resorting to sugar dosage. At the end of the harvest, the grapes are pressed very softly to extract only the first fraction of the precious flower must. Vinification is carried out in white, with fermentation in temperature-controlled steel tanks. After a few months of ageing, the vins clairs are blended and the second fermentation takes place in the bottle according to the Champenois Method with a 36-month soak on the lattes before dégorgement.
