"Perles d'Or" is the vintage Brut Champagne made by Domaine Jean Hu, a Blanc de Blancs made from extremely selected grapes with intense maturity. The name immediately reminds us of important occasions, obviously celebrated with a bottle of sparkling wine: its decisive character and great length make it a formidable Chardonnay.
Champagne Brut "Perles d'Or" is produced by Jean Hu by vinifying Chardonnay grapes from the right bank of the river, within the Vallée de la Marne region, between the village of Epernay and the more downstream village of Dormans: Vincelles is a highly reputed village and home to other important vignerons. The creation of a Blanc de Blancs in a situation where the predominant grape variety is Meunier, shows us the exceptional nature of Chardonnay grapes, bred and selected with extreme care. Harvesting is done by hand, and the bunches brought quickly to the winery are pressed with the traditional vertical pressoir, loaded with 4,000 kilos of grapes. The free-run must is fermented in temperature-controlled steel tanks, and the following spring the wine is bottled for frothing. Staying on the lees proceeds for at least 72 months, and the final dosage is within 5 grams per liter of sugars.
Champagne Brut "Perles d'Or" by Jean Hu presents itself to the eye with a luminous straw yellow color, laden with golden hues and with a subtle and persistent effervescence. The nose is rich and intense, deliciously centered on the buttery aromas of small pastries and the fragrances of leavened preparations, which blend with the fruity hints of ripe yellow flesh. The sip is extraordinarily full: the creamy, enveloping impact is perfectly balanced with a marked freshness, and the frame of extreme duration is drawn by a sapidity expressed with great finesse. A Blanc de Blancs of great intensity and structure that goes surprisingly well with chocolate desserts, or even with important cheeses, because of its decisive spicy impact.
