Jean Vesselle's Brut "Oeil de Perdix" is a Champagne made from the finest Pinot Noir grapes grown on the limestone-clay soils of the Grand Cru of Bouzy. At the end of the harvest, fermentation is carried out by individual parcel and only after several months of maturation are the vins clairs assembled to make the final cuvée. The second fermentation takes place in the bottle, according to the Champenoise Method, with resting on the lees for 36 months. The Champagne is amber in color with slight auburn highlights, traversed by a fine, continuous perlage. The bouquet gives aromas of orange blossom, orange peel, herbs, ripe fruit, soft hints of tropical fruit, toasted and bread crust sensations. The sip is particularly deep and multifaceted, with rich and elegant aromas that anticipate a saline finish of remarkable freshness.
