The winery is located in one of the most historic areas of Prosecco, in Santo Stefano di Valdobbiadene, and is run by the family of Loris Follador, one of the fathers of bottle-fermented Prosecco. The vineyards spread out over the hills in spectacular plots around the main buildings, perched on significant slopes that are a historical heritage of the area. Loris applies rigorous principles at every stage of production, starting from the vineyard, where he plants massal selection vines and excludes any chemical products for weeding and fertilizing, up to the winery, where the wine undergoes no chemical treatment.
Casa Coste Piane “Brichet Frizzante... naturalmente” is primarily composed of Glera grapes and, in a small percentage, Verdiso grapes. The grapes are hand-picked in a small historic vineyard at 400 meters above sea level in Combai di Miane. The name of the wine, “Brichet,” is a tribute to the vineyard’s previous owner. The soil is rocky-silty, low in fertility, which promotes more concentrated ripening of the grapes. The fermentation is spontaneous, driven by indigenous yeasts and is almost entirely completed. The second fermentation takes place in the bottle according to the ancestral method, followed by bottling with a crown cap.
The “Brichet Frizzante... naturalmente” wine by Casa Coste Piane presents a pale greenish-yellow color in visual analysis, not clear but slightly veiled. The foam is consistent and persistent. On the nose, it is a burst of freshness and lively notes of ripe grapes and fresh field flowers, with tarter aromas of green apple and fragrances reminiscent of bread crust. In the mouth, the effervescence becomes creamy and soft, while the pronounced sapidity is balanced with the freshness.
