The Brandy is originally from the Spanish region of Jerez de la Frontera. Right here Sanchez Romate Hnos company was founded in 1781 as a manufacturer of Sherry, produces the prestigious Brandy Cardenal Mendoza. Cardinal Pedro Gonzalez de Mendoza is a real character, a native of Guadalajara, played a key role in the "Reconquista" of the Kingdom of Granada and also in the expedition of Christopher Columbus, in his honor, the company wanted to dedicate this famous dessert wine. The production takes place with the method of Soleras: system which provides for the use of multiple rows of barrels stacked side by side and that in the course of time sees part of the distillate contained in the upper ones, transferred up to the lower end in the barrel that will contain the precious liquid, ready to be bottled. This technique gives a distinct flavor to brandy whereas the barrels used have previously hosted and Pedro Ximenez Sherry (typical Spanish white wine). Brandy Cardenal Mendoza dark mahogany color and a deep, rich bouquet from roasted coffee cherry, ripe plum from the fig tree. In the mouth it is quite sweet with hints of toasted walnuts and hazelnuts, caramel and even coffee. It is concentrated and well balanced.
